The base wine comes from a blend of 2 Greek varieties grown in vineyards of Aigialeia. The base wine contains all vintages from 2020 onwards, ensuring stability and complexity in the final product. The second fermentation takes place in a closed tank, where the resulting wine remains on its fine lees for 6 months with regular stirring. This is followed by bottling and maturing in the bottles for at least another 6 years.
Flavour profile
Light straw yellow colour, with satisfactory foaming in the glass. Fruity and botanical aroma character with a sense of yeast. Its taste refreshes the palate, keeping a crisp balance and a long finish.
Pairing
It pairs with grilled seafood, smoked salmon, salty yellow cheese or is served as an aperitif.
