Cellar: Pre-fermentation extraction for about 3 hours. Followed by static settling and alcoholic fermentation in stainless steel tanks with selected yeasts, at low temperatures. Part of the must is fermented in new oak barrels and matured in them for about 5 months. Staying with the lees for 4-5 weeks with gentle stirring.
Tasting Notes: Yellow green colour, aromas of exotic fruits. Light body, aromatic and refreshing on the palate. Ideally with fried fishes and white soft cheeses. Served at 12-14 °C.
