Penne is a cylinder pasta with an oval-shape hole, very popular with sauces, because its convenient shape “traps” them inside. It is a great choice for oven recipes with both white and red sauces, as well as mushroom and minced meat (kima) recipes. Boil the pasta, combine your favorite sauce and serve with either grated mizithra (excellent choice for red sauces) or shaved kasseri (great choice for red and white sauces).
