Description

The Xinomavro grape is sometimes called the Greek Pinot Noir and this is complex and delicious with fine acidity and flavours of strawberry, violet, chocolate and vanilla. A perfect match for rich dishes based on veal and game or with truffle-flavoured matured cheeses.

Diaporos is a single-vineyard wine made from old vines (planted 1972) grown in Block #5 of Ktima Kir-Yianni in Naoussa at an altitude of 300 metres. Block #5 is 1.8 hectares and has quite heavy soils of loamy clay with a low pH – ideal for producing full-bodied Xinomavro. It has a southeast exposure and a high inclination of 15%. It has always produced the best Xinomavro of the Kir-Yianni vineyard.

After a seven–day pre-fermentation cold soak at 8-10°C, the must undergoes a 10-15 day fermentation at controlled temperatures (23-26°C) in open tanks with pneumatic pigeage devices. This process aims at stabilizing the colour of Xinomavro and at softening its tannins. All of the wine finishes its malolactic fermentation in new French oak barrels, while frequent batonnage is applied. The wine rests in oak for 20 months and further 12 months in the bottle before release.
