The buds of the caper bush are widely used in Italian & Greek cuisine as a garnish or ingredient in salads & sauces, with meat & fish dishes, and on pizza. Pickles are an essential part of mediterranean cuisine and some of the best come from Cyprus and Greece. The caper bush is a perennial plant that bears rounded, fleshy leaves and large white to pinkish-white flowers. The plant is best known for the edible flower buds, called ‘capers’. The capers are used as a seasoning and are mainly pickled. They are delicious sprinkled over Cypriot village salads, and add a kick to fish dishes.
